First things first: when you go get a haircut, show the stylist the "goal" pictures! It helps them to get a visual idea of what you want—especially if you can't put it into words. Go to a salon, not a barber. In general, barbers are for shorter hair with very little styling, and it looks like you want something a bit more. The attention to detail in a salon will suit you. Just as an fyi, our hair type is similar, and I go for the Chris Pine style.
Since I don't know all the technical stuff that goes into this, I'll just tell you what I would do. I would start by getting the hair buzzed in the back. You can either have a fade or, as I prefer, just a low buzz with clippers.
On the sides, you just want something short and even. If you show your stylist your "goal" pictures, he/she can probably get it close just from that alone. The important thing to remember about the sides is to avoid "wispy" hair that comes from not cutting it short enough, like in the pictures you provided. As I'm sure you've noticed, it's annoying, hard to manage, and detracts from a "clean" look.
For the front, you're going to want it long enough to avoid the slick preppy schoolboy look, but also cut it short enough to be manageable. As an estimate, I would say 2 inches is about as short as you want to go. YMMV on this, however. I find that below 2 inches, it gets hard to style, which brings me to my next point.
Style your hair! This is perhaps the most important point I can drive home. Use a pomade like this or this to give your hair volume, hold, and that clean look you see on people like Chris Pine and Chris Hemsworth (although he uses more of a gel, from what I can tell). The great thing about pomades is they don't feel super thick, greasy, or heavy like gels do. They allow you to have the look you want without sacrificing the natural "matte" finish. If you want to look like Chris Pine, you have to apply a pomade like Chris Pine.
That's about all I can think of. Tell (and show!) your stylist exactly what you want, and if it's a reputable place, that's exactly what you'll get—or at least very close to it. Styling your hair takes time and effort, but believe me—it's worth it! Best of luck, and post an update!
