I would consider using 9 pin (or 25 pin) serial cables instead of VGA. They were extremely popular for device control. There are similar breakout adapters available.

I've used serial connections with ethernet cables over very long distances.

When I don't need very many pins I'll sometimes use old telephone cables with a surface mount box as a terminal. . They're not as plentiful anymore but for awhile you could get ridiculously long phone extension cords for super cheap.
