I first started out with an old Samsung smartphone that I no longer use mounted to my bike but its image stabilization was terrible and there's only so much you can fix via video editor so I went with the "budget GoPro alternative", Akaso v50x. I wasn't looking to shell out the money for the full GoPro camera just yet and it came with a ton of accessories for the money. The V50x has decent video quality but unfortunately sub-par audio quality (especially when it's in the waterproof case that it comes with) so I record audio while I'm riding through my phone (external lapel mic) and sync it up in a video editor. The extra batteries were cheap too so I went up with an extra pair of those for longer rides.
I tried to mount via handlebars but I swing the bars back and forth a bit while pedaling so I usually mount the camera to the front basket/front rack mounting points of my RadRunner. I made a bracket with some spare hardware and the mounting accessories that the V50X comes with. I also have a chest mount strap thing from Amazon but haven't used it a ton just yet.
I've seen a lot of Youtubers use a full-face helmet camera mount either under the chin or on top of the helmet but I haven't looked into those yet. It seems many are using 360 cameras now but those are even more pricey than the GoPro and seem more like a "gimmicky" camera angle for group riders.
