With this you can get a better GPU and more SSD. You can ditch the cooler for stock cooling but I tend to like going for an aftermarket cooler for quietness.
The 5600 is almost identical to 5600X in terms of performance.
3070Ti is slightly better than 3070. If you have the budget you could even go for a 3080 or a 6800XT, r/buildapcsales have some good deals on it.

CPU: Offers better price to performance than Ryzen 5 5600X whilst performing similar to it.
Cooler: Ignore compatibility warning on PCPartPicker, it’s wrong and outdated. Right now it’s compatible as it is now bundled with the LGA1700 bracket. I choose this cooler as it is one of the best performing coolers in the budget category. It’s better and cheaper than the Cooler Master Hyper 212 you choose. If you want RGB on cooler, the Vetroo V5 is another good choice and it’s compatible with this CPU and motherboard. The Vetroo V5 still performs better and is still cheaper than Cooler Master Hyper 212 however the ID Cooling SE 224XT beats them both in performance and price (only downside is no RGB) :(.
Motherboard: No need for an expensive motherboard for gaming, that could have went for a better monitor/GPU. This motherboard has decent connectivity as you already has two M.2 slots that can support PCIe4 and four RAM slots. This Gigabyte motherboard also have WiFi and BIOS flashback.
If going for the AMD route, consider the Ryzen 5 5600 non X and a B550 motherboard as this CPU is only 0.2GHz less than the 5600X so the performance loss is negligible. I want to note that do not use GHz as a comparison between AMD and Intel due to architectural differences. As for AMD motherboard, the main benefit of a X570 motherboard is Gen4 support across multiple M.2/PCIe slots which is not really needed, a B550 motherboard is enough for most gamers.
RAM+SSD: This is unbeatable for the price and you get some decently fast RAM and a high end SSD which is a Gen4 SSD, you can’t normally get these for such a low price.
PSU: 550W is enough for this PC, many people overestimate the wattage needed. This PSU is high quality and is made by Seasonic (with Phanteks rebranding). It is also fully modular to make cable management easier.
Case: Easy to cable manage and has good airflow. Overall a great budget case.
GPU: This GPU allows 1440p/4K gaming.
Monitor: Great display, decent ergonomic and fast response times for such a low price. I would highly recommend. It’s also a 1440p 144Hz monitor which I think it’s ideal for this GPU.

CPU: 12400F performs slightly better than 5600X (source). The 12400 is the same CPU as the 12400F, only difference is that the 12400F doesn't have integrated graphics. Its much cheaper than 5600X too. I would highly recommend this Intel CPU.
Cooler: This CoolerMaster AIO has a pretty bad reputation of being unreliable. In fact 120mm AIOs perform worse and are louder than air cooler. You're not getting good value out of these. This air cooler I chose offers much more better price to performance.
Motherboard: You certainly don't need an expensive x570 motherboard for gaming as the main advantage is to run muiltiple Gen4 devices. Fun fact, B660 motherboards (Intel's mid range chipest) already allows you to run multiple Gen4 devices whilst 99% B550 AMD motherboards allows to one SSD and GPU to be at Gen4 mode. This Intel motherboard I choose has 2 M.2 slots (enough for future upgradeability) and 6 rear USBs.
RAM: Don't need to lecture you on that
SSD: I feel like the SSD in the bundle is a much better value because if you take away the price of the RAM (its $62.99 for this Teamgroup kit), it should be around $75 for the SSD which is about the same price as your SSD whilst being much faster (since its Gen4 SSD as opposed to your Gen3 SSD)
HDD: I would recommend trying out 1TB SSD to see if it's enough storage for you before adding a HDD. We can't "predict" how much storage are we going to use, can we?
PSU: Good enough quality for this build, 650W is enough. It's fully modular to help with cable management.
Case: Your choice of case is good. But my case is a cheaper (but still decent) alternative to your case.
And of course, there's no need to add more fans.

An aftermarket cooler helps with quietness and looks better too
I still believe 16GB RAM should still do for gaming and streaming however 32GB RAM is more ideal for multitasking
Motherboard has 5 rear USB-A and 1 USB-C port. It also have 2 M.2 SSD slots aswell as BIOS flashback which can be a livesaver if you corrupted the BIOS.
1TB of very fast SSD to storage plenty of your games. A SSD is high recommended these days for fast OS boot times and game loading times otherwise your PC will feel slow.
The bundled PSU should be fine for the use of this PC
I wouldn’t trust this case as the build quality is likely going to be mediocre and this case lacks airflow. However, my case has good airflow and good build quality.
GPU is fine for 1080p/1440p gaming. Its also a good streaming GPU thanks to the NVENC encoder found in NVIDIA GPUs. If you're streaming via GPU encoding then CPU core count doesnt matter that much.
You may or may not know about this but for Windows, you can download for free directly from Microsoft with little caveats like a lack of personalisation options and you get a "Activate Windows" watermark but it can be solved by googling some workarounds.

CPU: This CPU is boosts up to 4.4GHz whilst the 5600X boosts up to 4.6GHz. That’s a measly 0.2GHz difference which just gets you negligible performance gain.
Motherboard: Has two M.2 SSD slots and four RAM slots which is enough for upgradeability.
RAM: Some decently fast 3200MHz RAM which is reliable
SSD: A high end DRAM cached Gen4 SSD. This RAM+SSD bundle is a steal as a whole as you get a high end SSD with it heavily discounted.
PSU: Added in a much better quality PSU. 550W should be enough.
GPU: You get a highest end ASUS 3060Ti for $530 whilst your is a low end 6700XT. They would probably offer same performance as a result of that odd comparison but usually 6700XTs are a tad bit faster in rasterisation performance. r/buildapcsales posts really good GPU deals.
