Basically any card is going to be a lot slower than the buffer. If you aren't shooting past the buffer you can maintain burst speeds.
Also from a reliability standpoint, just get whatever speed of Sandisk Extreme Pro UHS-I fits your needs.
Note: don't waste money on the faster and more expensive UHS-II cards, the D7500 doesn't have a UHS-II bus.
Honestly, great choice! I was initially thinking something like that or the Nikon P1000. Both would be a great camera for you if swappable lenses were not important to you at the moment. With a camera like this, you will get the zoom capability that you want, at an affordable price. It also looks like this camera has a decent shutter speed and burst mode which will be great tools for you to try out during take offs and landings.
One more recommendation I can make is to make sure you get a fast SD card. If you have a slower card, it will increase the time required for your camera to "cool down" and shoot again if the camera doesn't have a good buffer, especially in burst mode. When shooting photography when things are moving and timing is crucial, this is a factor you must consider. Also, they are not that expensive these days.
