iPhone 7 / 8 / X comes with EarPods that only have a Lightning connector. If you still want to listen through your old headphones, you can plug them in using a 3.5 mm headphone jack adapter

Right... 28 gauge wire is fine for the 500mah-1a you'll pull on a phone charger. That's pretty thin so should be easy to hide. Some tricks here on charging (you don't need to worry about the boost circuit since you have 12v in). The Belkin may be a problem but it's probably more of a ground loop issue -- you can buy an aux line isolator that will usually fix that, like this one
