Not at all what you’re asking for, but when my kids were little we had a nylon chopping knife and I loved it. I did a lot of cooking with a lot of different kids (scouts, etc.) and these knives are light, easy to use, and impossible to cut themselves with. They’re surprisingly effective for most cutting tasks as well.
