If you often need to shred large amounts of cheese, get a rotary grater. Something that looks more or less like this https://www.amazon.com/Rotary-Cheese-Grater-Shredder-Replaceable/dp/B096LQZ99N (Not saying is has to be that brand or anything, it's just the first one that popped up for me) You can shred a couple pounds of cheese very quickly, it won't cost a lot, and they are usually easy to clean and last a long time. Really good for shredding a bunch of carrots or grating potatoes too.
When I was a kid, my grandma had one in her restaurant for making hash browns, and shredding cheese, and all kinds of other things. It worked for almost twenty years of heavy use in a restaurant, before she had to replace it. (The handle broke) The second one was still working when she sold the place and retired.
