That is disappointing. I appreciate the follow up. That along with getting my other adapter working gives me some closure on if I was doing anything wrong.
For anyone stumbling upon this, here is the adapter I got working. I purchased it back in Oct 2019 but it appears to be the same listing still.

I am unsure about the Shield being able to pass on the motion controls, might be better to just use your computer directly with it's hdmi output on a tv.
If you are still able to find it, the Dualshock 4 USB Wireless Adapter made by Sony is by far the best bluetooth adapter for the DS4, ultra low latency, consitently reliable & support audio through the controller's jack. Can only connect one Dualshock 4 gamepad at a time per adapter though.
I also got very good results with a Plugable Bluetooth Adapter . It's using a Broadcom chipset and works with the DS4 as well as with 2x 8bitdo's SN30 Pro. If you plan on using 2 controllers at the same time on this adapter, one has to be set to Switch mode & the other as Xinput.
Ryochan's DS4Windows then takes care of the motion controls by enabling UDP server, you can also use DS4Windows to make the DS4 work as a Xbox 360 controller for games that don't support the DS4 natively.
If you want to use the 8bitdo's motion control, you need to start it in switch mode and pair it as a Pro Controller on the Plugable Adapter. Use BetterJoyForCemu to emulate it as a xinput controller + UDP server for the motion controls

The extender is just a generic cable but it does it's job. the dongle is one off the Haritora's user manual for troubleshooting to confirm it works with the device.
Reminder to disable your PC's built in bluetooth adapter if it has one before setting up the dongle otherwise you'll have to re-enable them and do it right the next time
There are no "quality micro usb cables", it's a shitty standard designed by morons. I've been using a bluetooth dongle and only use usb for charging.
I'm using one similar to this:

but if I was going for a new one, I'd go with just just for looks:
Would you use a generic bluetooth adapter then? I have one of these that I could try.
Any USB Bluetooth 4.0 adapter will work.
Just be sure to connect it to a USB extension and put it somewhere high up above the other objects in the room.

This works for me. Ctrl+K after you connect the dongle and the airpods to the PC.
Actually found it on one of those "Listicle" type things typing in "Bluetooth adapter for Ubuntu" - literally plugged it in and it worked.
Also can I just point out you are being a bit unfair blaming Linux? The seller has listed it as Linux compatible, isn't that on them?
