Lots of USB-C docks have 2 HDMI. Shouldn't be a problem. For example my wife uses this Lenovo dock. You can hook up either 2 DP or 2 HDMI to it.

If anyone happens to stumble upon this thread while looking for an option, after quite a bit of testing and trying to find a dock that doesn't 'warn' of unauthorized charging, but does still charge - the only dock I found that accomplished this was the Lenovo ThinkPad Hybrid USB-C with USB-A Dock. I am aware the reviews aren't fantastic on Amazon, but I have been using it for about 2 months now and it has charged my laptop perfectly and performed without a hiccup. I did take the steps to update the firmware and downloaded the drivers from the lenovo website, and with that step, the monitors and peripherals work perfectly. Some of my coworkers did not do that, and they had some issues with USB ports not working correctly. After performing the updates for them, the dock now works perfectly for them as well.
