I feel minimal shame for making pumpkin spice baked goods on September 1st.
I used this recipe for the shells. I halved it, so 1 stick of butter, and it makes enough for ~18.
The ganache filling was:
100g milk chocolate bar
45g heavy cream (steep spices in the cream)
1/2 tsp pumpkin pie spice
50g pumpkin puree
2g salt
I used 2.6" molds from Amazon. 28g dough balls, baked at 350F for 16 minutes.
Then after they set, a spoonful of marshmallow fluff and the torch.
