The capsule you linked to will probably sound great but be aware it needs some electronics. Condenser mics are extremely high impedance so a tube or field effect transistor is required to reduce it to a manageable value. Professional mics also require a polarizing voltage. 48 volts is a common power source in the form of phantom power. People often cannibalize cheap condenser mics to get the electronics boards that work for these.

Lots of microphone circuits you'll find are for electret mics with built-in electronics.. They are extremely cheap because they are produced by the millions for phones and other consumer electronics. These can sound amazingly good and they're tiny. You could hide one in any kind of housing and get a good looking and good sounding fake vintage mic.

Have fun!
