These are hands down the best V bits available: https://www.amazon.com/gp/product/B003DCMDRU/ref=ppx_yo_dt_b_search_asin_title?ie=UTF8&psc=1

Though, I don't think they come in metric shanks.

They do make a variety, but it all seems to be imperial shaft sizes: https://www.amanatool.com/products/cnc-router-bits/signmaking-cnc-router-bits/v-groove-miter-fold-signmaking-cnc-router-bits.html

Edit: When it comes to v bit cutting I've found that no matter the quality of your bit or the finagling you do with your toolpaths, some material just does not cut cleanly. Be it chip out at the surface (some plywood in my experience) or fuzzy cuts (plastics) sometimes you will just have to deal with post cutting cleanup. Also, if you aren't using V-Carve make sure your software does all final passes in the climb milling direction.

If you want to do v-carves, I bought this Amana insert bit off Amazon that works great, with the caveat that you have to make a jig to align the damn thing. I'll upload pics tomorrow.
