Line out to audio interface will work. However the sound quailty is limited by the inexpensive ceramic cartridge found on cheap suitcases and all in ones.
A better turntable worth digitizing with will have at least the white diamond tip AT stylus on an MM moving magnet cartridge connected to a built in RIAA phono preamp for better sound quality.

If he may already has a turntable connect it to a USB interface with Phono or Line inputs.
