My brand : Wild Planet Lightly-Smoked Sardines. They still have their spines so they are about 50% cheaper than the deboned ones. Deboning is easy, just takes some practice.
In terms of how I eat them -- I pretty much put them in everything. I think they work best in pasta or brown rice with some hot sauce. I also add them when I make a loaded sweet potato (baked sweet potato, olives, onions, some cheese, and sardines). I only have one dish that is actually specific to sardines -- I stir fry some pecans and green beans and then throw in some sardines. The sardines with the pecans is incredibly good (I can't really describe why, but it's at a "whole new world" level).
These are the ones I eat. They are cleaned, but they still have their spines, so if you don't like that you need to remove them (takes me ~10 seconds per sardine). They go on sale every once and awhile, and since they have a 1-year guaranteed shelf life I usually wait until then and then buy them in bulk -- usually it works out to about 1 dollar per can.
In my experience, most sardines packaged in olive oil taste about the same. They took me a little while to get used to at first, but now I love them. Just don't make the mistake I did of buying 60 dollars worth of the ones packaged in water. I thought they would taste the same once they were drained and I was very wrong. I give those to my cat now.
