Well, the Jumpgate/Core Dock doesn't support Ethernet. It also only has two USB ports, which isn't a total dealbreaker, but isn't that great.
I ended up ordering one of these. I'm not really super pleased with the feature set but it's really cheap, and it should be a workable solution in the short term until I find something more satisfactory. Thanks for the help!

Gotcha. So Thunderbolt isn't necessary, but good for having multiple displays in one port.
From my understanding then, I don't need a pricey dock after all? I could just plug one monitor directly into the MBP via HDMI and get a cheaper hub and plug another monitor via HDMI, like one of these:
