Here's what I got for you. Black silence-focused build, great for music production and basic gaming.
- CPU - the best mainstream CPU for complex music production, thanks to its 16c/32t and top tier single-core speed. The core count is directly related to the max number of tracks you can process at a time, and the speed relates to how quickly these tracks can be processed. Be sure to enable 105W Eco mode, which drastically reduces temps and power draw for practically the same performance. The reduced temps is important for silence as it means that the cooler doesn't have to work as hard.
- Cooler - excellent value with top tier performance. Performs like a $100 cooler for half the price. Powerful and quiet.
- Mobo - has all the connectivity you need, including WiFi/BT. You already use an audio interface so the onboard audio codec doesn't matter.
- RAM - 64 GB of fast 5600 MHz CL30 low profile RAM to fit under the cooler. 64 GB is generally overkill for music production but you said you use lots of plugins, so the extra helps a lot.
- SSD 1 - the M450 is for your OS. Normally, it's not necessary to split the OS from the program or game drive, but it's especially important for music production. If the OS is on the same drive as the project files, you may experience minor artifacting in your recordings (pops, clicks). You can put your games on this as well.
- SSD 2 - the P44 Pro is the second fastest Gen 4 SSD on the market. Great for your programs and active projects.
- HDD - 4 TB of reliable bulk storage. Great for your media, documents, and completed projects. This drive has CMR layering for increased durability over conventional SMR drives.
- GPU - the RX 6600 is solid for light gaming, especially in the games you listed. I'm happy to see another Trackmania player lol. The triple fan design makes it slightly quieter than dual fans (since the fans don't need to work as hard).
- Case - it's tough to find small cases that are designed for silence. You could go for an airflow-focused case with extra quiet fans, but I opted for a known lineup of quiet cases - Fractal's Define series. It comes with foam dampening on both side panels and the top for noise suppression, and while airflow isn't the best, it's good enough. It comes with a 140mm fan as front intake and a 120mm fan for rear exhaust. This case also has easy cable management and top-tier build quality.
- PSU - high quality with fully modular cables to minimize cable clutter. 750W is more than this system needs, but the overkill nature means that it'll operate quietly.
- Fan - extra for front intake. This improves airflow with one of the quietest fans I know, and creates a positive pressure configuration to reduce dust buildup.

Here's what I'd do. Your GPU is in dire need of an upgrade, especially for video editing and AI.
Other than that, I downgraded the RAM to 32 GB instead of 48 GB. You have 4K monitors but your videos don't need to be rendered in 4K as it's for educational videos, so 16 GB should even be fine. 32 GB gives you little more headroom.
I also upgraded your SSD to a Gen 4 drive, and added a 2 TB HDD for general bulk storage. Your OS, programs, games(?), and active projects should be installed on the SSD, but your archive stuff should be on the HDD.
I upgraded your GPU to the RTX 3060 with 12 GB of VRAM. Excellent for video editing and AI.
