Yeast raised donuts!!!! Go enjoy like 20 of them in one sitting. I have yet to find a good substitute or anyone that makes them.
Don't fret too much about other things though! There is certainly a learning curve, but there are REALLY good replacements and substitutions for all the things you love.
I LOVE baking. I love cookies, brownies, bread, scones, biscuits, etc. You name a baked good - I guarantee it's one of my favs. The good news is that you can adapt soooooo many recipes SUPER easily to be gluten free!!! There are a lot of really great "measure for measure" flours out there that can literally be used cup for cup in almost any cookie, brownie, cake recipe. You can also use it for breading or thickening soups just like regular AP flour.
Bread has been a bit tougher and I had to build up my skills and confidence for baking bready items. Measure for Measure I've found doesn't typically work, but there are several blogs out there with their own "GF bread flour" recipes and I've made soft, pillowy dinner rolls, Hawaiian sweet rolls, cinnamon/sticky buns, and focaccia bread. There are many blogs/cookbooks that give great recipes for AMAZING bread. Not just "oh this is okay for gluten free" but like AMAZING on it's own bread. My husband prefers the "pumpernickel" bread that I make to the stuff he used to buy in the store.
So I know it's easy for me to say 3 years into my Celiac diagnosis, but I promise it gets easier and FAR less anxiety inducing as you go!
