You can go with a GoPro. I ended up buying two AKASO action cameras and a Romoss battery bank. I point the front camera a little to the left and the rear a little to the left as well to get more view of approaching vehicles.
They work pretty well although I wish I had 360 video. It's good on a budget of about $200 with cables and stuff. I think probably a good bit better than what's out there that's more specifically for this purpose.
