I'd also recommend picking up the Breville cutting board:
It fits perfectly on top of the APO (has heat-proof feet to raise it up) & gives you a place to put hot pans! As far as the mats go, they do a pretty decent job. So my stack is:
This allows airflow under the perforated mat. Chicken, burgers, and wings have all come out good so far! The airflow underneath isn't perfect, but it's like 90% as good as the top. I flipped over a couple wings to show the under-side with the mat:
I'd say expect to budget about $150 for aftermarket accessories if you want to get serious use out of the APO (or even more, if you want a Baking Steel). That way you can get racks, pans, mats, a cutting board for the top, some jars, and some silicone trays for things like egg bites in order to make a variety of things with your tool & toolset! I've had a lot of fun with mine over the last few months:

It's really handy because the microwave cart doesn't have wings on either side, so there's no place to put larger, hot dishes to load & unload into the APO.
