I use the Bose 700 headphones at dialysis. They are Bluetooth but also have a headphone jack you can plug into.
Yeah, sure!
Sorry, going to end up recommending expensive ones as that is what I personally bought and used but I feel they are worth the investment.
I use these at home:
Sony WH-1000XM4
I bought them from Amazon as renewed. Cheaper and they have been excellent - they occasionally go on sale - I got mine for $199 back in 2020 - you can follow /r/buildapcsales to get a good deal. Comes around like once a month or so a month. You will likely be seeing deals for XM5 though (like this https://www.reddit.com/r/buildapcsales/comments/z89kdp/headphones_sony_wh1000xm5_refurb_2year_warranty/ since it is the newer version of the headphones.

Airpod Pros
I carry these around so I can pop them in if I'm out and about and there is some noise annoying me: https://www.amazon.com/Apple-Generation-Cancelling-Transparency-Personalized/dp/B0BDHWDR12
Apple AirPods Max
I use these at work in my cubicle. I just like it cause I use an iMac at work and have an iPhone, so swapping between the two is easy. I practically live in the headphones when I am at work and I work in a noisy environment, so they were worth it for me.
I personally think the XM4 edges out both Apple products in noise canceling. Over the ear is going to do a better job as well (like the XM4).
Bose also supposedly makes some good noise-canceling headphones (Wirecutter thinks they are the best in noise cancelling.)

If you are looking for a cheaper option, Wirecutter (https://www.nytimes.com/wirecutter/reviews/best-noise-cancelling-headphones/) recommends:
1More SonoFlow for normally $100 but on sale for $80 bucks (check the wirecutter link above for the coupon).
Can't tell you anything about them from personal experience.
