My partner and I have Coleman cots. We just put our sleeping bags on top of the pads and can sleep half in / half out of our bags depending on if it’s cool or hot.
The cots are light enough for carrying but still built well. I’m 6’4” and have back pain, so I picked up a Big Agnes sleeping pad to throw on the cot this year for much needed extra cushion.
Cots are just easier all around, though. You can hang out on them around camp in the morning. Can come back to it during the day for a nap or for resting your feet. They’re just extremely useful compared to tents or the unwieldy nature of air mattresses.

Just saw your sleeping pad link. While I went with a Big Agnes for long term quality and back pain issues I have, I’d still recommend the Klymit Static V instead of the one you’re looking at. Very similar in price and a pad that Reddit hikers / campers seem to love as a budget choice.
As for your concern of narrowness of a cot, I guess it depends on how you sleep. I’m a side sleeper, so even though I’m tall my knees curl a bit and I don’t hang over anywhere. (The biggest issue was the cot pad being shitty and my hip sinking into the metal bars, so the sleeping pad on the cot base will be a game changer for me this year at Roo.)
