Just some ideas here, I don't have a solution either...

I can't imagine anything would be super ergonomic, but the products you linked look like they'd get the laptop closest to you. Most things are made for Peloton, but maybe some are compatible? Otherwise you could use cardboard to get the right shape and then have something made out of wood (or acrylic + laser cutter)?

My macbook fits on the integrated ipad/device stand, but my dell doesn't. Not great to use the trackpad or type, but if you're just on meetings it's fine. I put a mouse on a tall bar stool next to the bike (now that I'm thinking about it, a plant stand would be nice, you can have plants on it when not riding).

My friend has a standing laptop stand that they use on the bike (a different brand) as well as in the kitchen and watching tv. It's versatile, but reaching the keyboard is still going to be not great.

I wrap my handlebars in fabric tape, so that'd get around the damage complaints on the acrylic product you linked.
