Just to add to my own post for anyone searching this later. I haven't read all of these but plan to. I mention them because they're either very comprehensive or give you insights into some political figures somewhat lost to history.

The Ben Gurion book is about 12,500 pages and doesn't even get to the establishment of the state! It's a good look into the politics of the pre-medina days. I've begun this and so far it's very good. I imagine it may be tedious for some.

People like Ben Gurion and Dayan are the figures we most associate with the early Mapai governments, so it's interesting to see the early political conflicts from the perspective of Moshe Sharett, who was part of those governments but often broke with Ben Gurion and was much more pacifist in his approach to the Arabs. It's about 1,000 pages.

He's associated with HaShomer, a defense organization in the pre-state days, the kibbutz Artzi movement, and the pro-Soviet Socialist-Zionist Mapam political party, not to be confused with the communist Maki party which was always non-Zionist.
