I've had one of these for several years and love it ! It seemed awfully expensive at the time but it works easily and very quickly. It's made me use tofu much more than I did prior. I do use extra firm tofu so I'm not familiar at working with silken or soft types.
When you do experiment with tofu, definitely press it - it eliminates water from the tofu so it can suck up the flavor. It makes a huge difference how the tofu tastes and cooks.

I've been using the EZ Tofu Press for a good while and I love it! The only downside is having to regularly turn the knobs to keep pressing tighter and tighter. I usually put the tofu in the press a few minutes before cooking, and incrementally tighten while I'm prepping veggies or something. By the time I'm ready to bake/fry/whatever the tofu, it's nice and dry! Oh, and no paper towels are involved!
