Going back to option 2, would you have any recommendations for a Thunderbolt 3 dock that supports dual 4K at 60hz? And what do you mean make sure it has outputs matching my screens? Do you mean the full resolution of the monitors?
So here's a dock that supports dual 4k60hz displays based on their specs, and isn't $300. You will need TB3 to DisplayPort adapters, however, to go with it, since it is effectively a Thunderbolt hub. 60W charging for the laptop.
Here's a Thunderbolt3 dock with one DisplayPort and one downstream TB3 port which can be converted to DP and thus it can drive two 4K displays. 65W charging for the laptop.
For other options you need to look up docks which are:
Thunderbolt-based, as opposed to USB-C.
Have two DisplayPort outputs and state clearly that they can support dual 4K monitors at the same time, or have thunderbolt downstream ports which can be converted to DP.
Can provide the correct amount of charging power that your laptop needs, unless you want to use the non-USB-C charger which I believe your laptop also supports.
