Convenient: Orka silicone mitts. They can be used to lift a turkey out of a fryer, as in "immersion contact with fryer oil." (Not recommended.) Downside: A bit slippery. The grip isn't great. Never dropped anything with them, but I'm sure it's a matter of time. They're like the silicone Hot Hand, ubiquitous but one-size-fits-nobody.

Readily available: Any auto repair gloves designed for working on hot engines. Inexpensive, decent grip, effective. Downside: Most aren't waterproof, so some caution is called for. Any Auto Zone has a display with different brands. Most big box hardware stores stock similar models, too- including waterproofed (dipped) types.

Hard-core: Firefighting gloves. I prefer Tempo.
