I’m a big fan of those cut-proof gloves. It gives you the freedom to carve (carefully) without worrying about slicing yourself.
I first started whittling with Morakniv knives, which are affordable, and great quality. Do a bit of research on chisels though. I bought a cheap set years ago from Michael’s or something, and they started bending with the slightest bit of pressure.
