Help with: Identifying good sensor kits or whether I should start working with an Arduino.

Just got a Raspberry Pi (1 B?) for free (ethernet, two usb ports). Until I'm able to get my hands on a Pi 4 (which I'd like to use for Klipper with my printer), and while I learn more, I figured I'd use it to learn more about the capabilities of the pi (relative to the hardware side of things). I owned an Arduino very briefly in the past, took electronics classes in high school (but, realistically, have forgotten most of it) and am a data engineer by trade (so, very comfortable with Python).

Two questions:

Note: At the moment, I'm just in "learning mode". I don't have any thoughts on specific projects I'd like to use the Pi (or an Arduino) for.

I have a lot of programing experience so would I love to do harder projects, but want to teach my 11 year old sister and do some small easy projects.

I want to buy a component kit to make projects for Pi 3B+ For Under $100? Preferably within/under $50?

Saw this bundle which looks promising, but says that it is for the 4th. Im guessing you can still use it for the 3B+: https://www.amazon.com/SunFounder-Raspberry-Ultimate-Detailed-Tutorials/dp/B09BMVT4CB/ref=sr_1_6?crid=2DU0P94SNT9J2&keywords=Canakit+bundles&qid=1655863348&sprefix=canakit+bundles%2Caps%2C427&sr=8-6

Any recommendations?

Will I have problems running the camera, LCD, or speakers with 1GB of RAM? What about using all of them at the same time?
