I use this guy, and struggle to get the right amount of heat. Problem is, the controls aren't very sensitive - it goes from low flame to raging inferno, with nothing in between.

Heh. I know, this is just something you're possibly considering doing casually. But, if you decide to go forward with it, you can save yourself some frustration if you have tight control over your heat source.
