The Eroica is my favorite symphony, and I've listened to dozens of recordings. I'm not nearly as refined and educated as most of the posters here (very grateful for their expertise!) but since you just asked a general question: my favorite recording right now is Blomstedt with the San Francisco Symphony. It's not a very well known recording, I guess - I found it in my local library years ago and fell in love with it.

Also, if you want to transform your enjoyment of this symphony, I recommend listening to Robert Greenberg's lectures on it. He opened my eyes to many things that I had no idea were happening before. It feels like I went from 2D to 3D.
