If you go the weber route...here are a few add ons you can get besides the slow and sear
A pinned hinge so you can still remove the lid when you want, but you can hinge it open and closed the rest of the time
The gourmet grill grate system. Also the sear grate which is sold separately
And the Vortex. Its great for doing smoked wings. They have cheap imitations on Amazon, but its worth it to get the real deal if you want one
I have the Weber Performer with the folding side table. It has a sturdier base that the original tripod, but is still cheaper than the full on Premium model with the full side table
There are lots of other upgrades so if you go the kettle route, youtube Weber Kettle Upgrades and just do some searching
I have this for my kettle. All in all, I like it a lot but here are some notes about it:
There are a lot of gaps where air will slip in while running the rotisserie, this will cause your temps to run higher than you are expecting based off of your standard vent positions.
The standard set up for pizza will take forever to cook a pizza since the heat climbs to the top of the kettle dome instead of right over the pizza. To fix this, I also bought this:
Skyflame Stainless Steel Modular Grill Grate with Half Round Searing Grate & Half Round Griddle Plate Fit for 22" to 22.5" Weber Dancook Kettle Style Grills, Outdoor BBQ Grill Accessories https://www.amazon.com/dp/B07P8PHZRD/ref=cm_sw_r_apan_i_DFJF084GPDZJ9TQ4RKS2
You are able to set up a 2nd grill grate at the top of the pizza insert. The solid stainless portion will force the flames over the top of the pizza.
Weber Gourmet BBQ System Hinged Cooking Grate https://www.amazon.com/dp/B0044EQM9Q/ref=cm_sw_r_apan_i_X97Y187HVW83M1ZVAETJ
I flip my grate upside down and let one of the flaps fall into my slow and sear, this gives me access to the coals to be able to add wood as it cooks. It has to be upside down as the handles on the top will get in the way while you cook.
