I use an osprey stratus with individual padded containers. I keep a nifty 50 on the camera body in one and 2.8 16-35 in another. I have a little carrying case that has some cleaning supplies and backup lens filter. That leaves me enough room for water and either snacks or a jetboil and dehydrated meal. I put a tripod in the side pocket and Velcro strap it at the top. If I’m staying overnight, I add a hammock and necessary accessories strapped to the back. I keep a GoPro on the should strap, too, just in case I need something quickly or want to play around in water or something.
I love the setup because it’s what I need without anything I don’t and it’s all stored close to my body.
The glaring negative I’m reminded of every time I’m out there is that the Stratus doesn’t open 180 degrees so getting to anything that isn’t at the top of the pack requires me to full stop, unpack, and repack. I prefer landscapes and astrophotography, so I have time to set up, but it’s a valid criticism.

I use an insert (this one) in my Timbuk2 backpack (this one). It holds my T2 and an extra lens, either the 18-55 or 23mm. The bag also carries a joby gorilla tripod and my laptop in a sleeve, plus whatever else I need to stow.
It's a nice waterproof bag, but I wouldn't pay full price—I happened to get it on sale for maybe $80-90.
