Your best bet is Stainless, because 99% of rice cookers listed as Ceramic actually mean an Aluminum pot that's coated in a Ceramic Non-stick surface. Aroma has some decent options with a pure Stainless cooking pot, but it's hard to find higher end options with a Stainless pot. Like a $40 rice cooker with no MICOM or advanced features sure, but something closer to $100-120 with better performance? Rare to say the least. You CAN Instant-Pot rice with one of their Stainless models, but that also won't have MICOM so you'll need to make adjustments for water, cooking time, and pressure release method. Can be hard to find a method that consistently produces good rice in those.
You don't want to go too cheap because rice in very budget cookers WILL almost always stick to Stainless, possibly burning or overcooking the bottom easily. So personally, I'd stay away from the bare bones models with just a simple on-off switch and a glass lid. I don't think any of those will reliably cook great rice in a Stainless pot.

I haven't tried that model, but that is likely in the ballpark of what you are looking for. I personally like at least 6-cup models, but if you prefer something smaller then that would probably be a good fit.
