Starting from zero knowledge, I want to learn electronics starting with simple breadboard work, then move on to soldering, and eventually be able to repair and mod gamepads/consoles - and actually know what I am doing.

Can anyone recommend good component starter kits and tutorials I could use with an old Pi 2B? I found this one which includes a lot of sensors, all components should work together, and comes complete with a tutorial for GPIO using Python (I already know a bunch of Python so I won't need to pick that up). My main concern is I looked at the tutorial and it covers more GPIO than it does the theory behind the wiring and components themselves. Would this still be a good buy, or are there kits with better tutorials and components in the same price range?
