As you go larger on inverters you quickly need very large ($$$) and very short cables between the battery and inverter. That's what makes the installation difficult and expensive.
You need to figure out whether you want 200 watts of AC power or 2,000 watts of AC power.
The installation will be radically different for those two sizes.
Most people do not have a large enough battery bank to run large devices anyway, so just stick with a high quality smaller inverter and find alternatives to electric hair dryers when off grid. Getting a battery system and inverter that can handle an 1800 watt hair dryer may be thousands of dollars vs hundreds of dollars for a smaller inverter.
