I had the same problem with my original Xbox one controllers.
The Xbox core controllers with the latest firmware work, but the have bad latency spikes during gameplay.
I use the 8bitdo pro 2 controllers (https://www.amazon.com/8Bitdo-Bluetooth-Controller-Switch-Android-Raspberry/dp/B08XY8H9D5/ref=sr_1_4?crid=1VBU2X075XHSM&keywords=8bitdo+pro+2&qid=1671912386&sprefix=8bitdo%2Caps%2C103&sr=8-4) but I have to hard wire them and then they’re fine. With Bluetooth, they have the same latency spikes as the core controllers.
Try updating the firmware on your Elite 2, but if that doesn’t work, then you’re probably SOL. This is a parsec issue cause these problems do not happen on moonlight/sunshine or steamlink.
Many companies make dedicated Fighting Game controllers they often call "fight pads." These games have d-pads that are designed to be used for circular inputs, are wired for less input lag, and have layouts that place more buttons on the face of the controller. The most common and recommended ones are the Hori Fighting Commander, PowerA Fusion Fight Pad (thought the Xbox version seems to be perpetually out of stock), and MadCatz Fight Pads like the SFV Pro.
For me personally though, the best dpad I have used on a modern controller comes from 8bitdo. They make great feeling and very precise dpads. I would recommend the 8bitdo Ultimate or Pro 2. If those are too expensive, they just came out with the Ultimate C budget version.

Note that there is an new model on the market now, the Pro 2, but from what I saw it just seems like a few minor quality of life improvements.
Chinese knock off garbage.
It allegedly should work just fine, but because there is no guarantee of quality it could break right out of the box, or a week from now, or if the Switch gets a firmware update it may simply stop working altogether.

Unlicensed third party devices like that one are a shit-show of questions and risks. Its not worth the savings over something like an 8bitdo controller or a licensed wireless controller.
