If you blend most of what you collect besides heads and tails, then the end of the heads going into the hearts would be targeted at 140 proof. As the run continues the proof goes down as the temperature goes up as more impurities are being distilled with the alcohol. If you start with 5%-10% after fermentation you would start the hearts about 120 -140 proof.
But this is where my set up is different I use a doubler/thumper and get two distillations in one run. With a pot still and worm you will have to do a stripping run, and then do a spirit run. The stripping run yields low wines probably 40 - 50 proof maximum. But I don't have much experience with that type of set up. I am not really sure if you collect much or little low wines to run for a spirit run. I know that I add some wash to the thumper or sometimes fruit depending on what I am running to add something to the flavor of the end product. Adding fruit to the thumper is like using a gin basket, it helps infuse flavors into the spirit. So adding fruit or sugars will sweeten the end product. This is the still I bought
