Red thai curry! I know that amazon's prices for the red that curry paste are higher than my local Asian market, but I make this at least 3x/month. You'll also need coconut milk. Serves well over noodles and rice. You can toss in onions, peppers, potatoes, butternut squash, cauliflower, and spinach to add vitamins/use up produce.
