David Craddock wrote a few books about roguelikes, including the aforementioned Dungeon Hacks, and also one called One Week Dungeons which is about 7DRL development. I got interviewed for one of the chapters in that book! Oddly I can't find it on Amazon anymore. He also wrote a book about Diablo, which might be considered a roguelike.

That said, I imagine there are other books that are directly applicable to Rogulike Development, such as that PCG book I linked in the OP. Maybe there are some strong AI, Game Design, or even UI books that roguelike devs here have found applicable?
