Awesome list! I'd just like to add some variants.

Knife: Leatherman Sidekick $50 I like having a multi-tool with a saw.

Light: Black Diamond Cosmo $25 has red light for good night vision.

Water Bladder: 6-10L MSR Dromedary, $45-$50. I got the 10L last year and its opened up a lot of backpacking areas for me.

I would reccomend using it with a portable battery pack. Charge the battery pack and use the battery pack to charge your device.

Solar charger! You can attach it to your backpack or leave it in your car back at camp (attached to a portable battery pack) and you'll have plenty of juice for the weekend. I have this one but I got it for much less, as it often goes on sale.

Also, this year I'm planning on bringing some of these little guys to give away as trinkets around the polo fields.

The Anker panel you posted a link to is one of their old models that uses inefficient cells.

Their newer ones are lighter and smaller for a given power output:

(still 12.5oz but it pumps out 15-Watts so on an ounce-per-Watt ratio, it beats the one the OP bought)
