Recently fell in love with these - https://www.amazon.com/WEICON-Stripper-Adjustable-0-2-6-0-Stripping/dp/B001NUMVHQ
They can be a tiny bit finicky, but for the price, they're incredible. Took me a few tries to get a feel for it, but now I can prep wires from a bundle way quicker and without any awkward pulling or severing wires. The "pro" model of these appears to do a wider range of wire sizes.
Beyond these, I'd look at the Knipex preci 16. They seem to be the more overbuilt, ready for anything (flat wire, round wire, huge range of sizes).
But less than $30 the Weicon's are my new best friend. Just finished a synthesizer rack that included a bunch of 12 awg THHN (power), and some multi conductor audio wiring down to 26 awg. This even strips the outer jacket of the multi conductor, without touching the inner wires. Then it strips those wires. Really wild to do all that without making adjustments.
