The S5 does not support Quick Charge. In case it isn't clear, Quick Charge is a brand name for a specific method of fast charging. The S5 is capable of charging quickly, just not using the Quick Charge technology.
The S5 can charge at up to 1800 mA (aka 1.8A). You do not need to purchase a Quick Charge power supply to get this speed, and you do not need to use a USB 3.0 cable (the extra wide connector on the phone side). A USB 2.0 cable and a charger rated 1.8A or higher will suffice for the max possible speed.

I've heard people talk of ultra low quality USB cables that limit charging speed, however I haven't found this to be a problem. I have a whole box of random cables and they all seem to just work.
As for charger, anything that says 2.1A per port is fine. Anker is a good brand, though in my opinion it doesn't really matter much. As long as they're rated 2.1A, a charger is a charger.
