Slightly over budget but also consider the Tojiro DP gytuo. It is significantly harder than the Victorinox and will hold an edge much longer due to its use of VG-10 steel at 60 HRC versus the X55CrMo14 at 55 HRC in the Victorinox.

And whether you decide for ST or Tojiro, add this Tojiro bread knife.

Edit: corrected the Amazon links to not contain any referrals. Also, while doing this, I realized Amazon autotranslate to German makes Petty knife into Kleintiermesser. Which is a knife you'd use to butcher your hamster of fillet your goldfish.

Unexpectedly received a new knife, a Tojiro Gyuto. I had put it on my amazon wishlist months ago as a "well when my current knife breaks or something" thought, forgot that my family has access to that list. So that was a nice surprise! It cuts beautifully and I think I'll be very happy with it.
