First of all, you seem to be leaning towards an adjustable height desk? Personally, I'd recommend it, especially working up to having it 80-100% at standing height. If you're interested, I'd steer you towards a brand like Fully unless you're comfortable with tools, in which case the DIY route of pairing a top with a frame could save you a fair bit of money. In either case, I recommend a desk that's 30" deep, stay away from 24" unless that's your preference or have a reason for a shallow desk.

As far as chairs, with WFH being a primary focus, I'd personally prioritize an ergonomic office chair and/or a wobble stool, depending on how much you'll be sitting/standing. Adjustability for a chair is key, at minimum look for being able to adjust the overall height, armrest height, and armrest length/width position. For an office chair, the Steelcase Series 1 is a great starting place, work bought one for me during covid and I can't recommend it enough if you're looking for an ergonomic chair. If standing appeals, a height adjustable wobble stool provides good relief without having to adjust your desk.

For monitor mounts, I much prefer the post mount style, with one mount per monitor. The advantage of this type of mount is that your monitors don't wobble. Arm version for the sides and https://www.amazon.com/dp/B07MTS4H7P/ for the middle.

Docking station, depending on your processor, the thunderbolt dock is usually a sweet spot. I have mine mounted to the back of my central monitor but under the desk is another good place to hide cables. You could also throw your laptop underneath your desk to further save desktop space and hide cables.
