Got my mini a couple weeks back and bought a few things like you are planning to do. I got the UAG case and bought two different tempered glass screen protectors, one a mattered the other one normal.

Haven't used the Spigen protector yet but I do have the same on my iPhone 13. Loving the matte so much right now, especially with the Apple pencil I bought to go with it.
Used Paperlike for a long time, recently switched from 12 Pro to current Mini and put on a Spigen Glass from Amazon. Sure, no texture change but its smoother sliding in my eyes still. Like my hands are never stuck as they were on iPad Pro not moving during I wrote.
So far (1-2 months now) am very happy with it. For context: Using iPad in university context, but also much less handwriting then earlier as programming become now my main work needing me to use the keyboard.
