I made this recipe, where you cut off the ends and then slice them lengthwise. Scoop out the centers, fill them with good stuff and bake.
Think of them as replacements for pasta, tacos, pizza shells, etc. Whatever your favorite toppings for those things are, put 'em in the zucchini shells and bake them. You can really change up the flavor profiles by changing what you put in the shells.
If you have one of those little zoodle makers, that's another thing to do with them. Anything you'd put on pasta, you can put the zoodles in. No, they are not made of flour and will not taste like pasta. But they do the same job of carrying the good stuff to your mouth.
I got this zoodler from Amazon, and it does the job.
Sliced into rounds, olive oil, parmesan cheese, bake. I used to steam them, but I'm really into oven-roasting these days.
