Buuut... it's HDMI 2.0, not 2.1. So you're going to be limited to 4K/60.
4K/120 won't work on 2.0.
They do make HDMI to USB-C cables, but you have to plug in to both the HDMI AND a USB port on the PS5 to power the output to the USB-C monitor.

I use this cord and love it!! I can plug it into a hub, this allows me to charge phone while wearing glasses, access usb ports ethernet etc... If I use a female to female HDMI adapter I can plug glasses into Chromecast with Google TV. I can plug into anything HDMI, DVD players, NVidia Shield, Laptop..... Have yet to find anything that does not work, all with audio passthrough. The cable is rough on my ears. I bought a female to female USB C adapter that is rated to pass video signal. I can plug the nreal cord into adapter. Cheers!!

If you are going to use a hub and adapter, then the hub part of your parts list is good. The adapter is converting the wrong way though. It is a USB-C to HDMI adapter. You'd need a HDMI to USB-C adapter, like the https://www.amazon.com/dp/B0B5XBYQSM/

While it would be more seamless to use a Mini PC with an actual USB-C DP-out port, there are ones that exist: but they are 2-2.5x heavier, 50% larger, and twice as expensive with 3x more power usage than what I'm working with right now - and I'm already barely maintaining 6-8hr of battery life with a 99Wh battery.
Tech will keep improving though!
