Looking for a nondairy alternative to buttermilk has been a huge challenge for me as well. My current mock up is a yukon gold potato puree, thinned to a buttermilk-like consistency with water and spiked with vegan-sourced lactic acid. I haven't got it dialed it well enough to debut on Serious Eats, but that's where I am!

I am so, so excited about Picard, and all the tiny cameos, most especially Hugh.
