Did you try a different version of the dock you mentioned, this one seems to support 2X 4K60. https://www.amazon.com/dp/B086DXLF37/ref=emc_b_5_mob_t
Also, look at USB4 and USB-C docks, TB docks tend to come with more bells and whistles (like PD) and you’re really not running too much that would require heavy duty performance.

I'll probably just order this https://www.amazon.com/Sisyphy-Surface-Connect-Compatible-Microsoft/dp/B08KYGSY3G/ref=sr_1_4?crid=4MYCMO9HCUE8&dchild=1&keywords=surface+connect+to+usb-c&qid=1615899483&sprefix=surface+connect%2Caps%2C247&sr=8-4
I got this for mine: https://www.amazon.com/Cable-Matters-201331-BLK-Computer-Docking/dp/B086DXLF37
Works perfect for me. Dual screens (1440p ultrawide 120hz and 2560x2880 LG DualUp), ethernet and peripherals.
